The perch come from the lake, a few minutes’ walk away. The foie gras, the lamb from Cheyres and the Ibérico come from further afield — but everything is made here.
The house
A village inn that became a table of its region
The Restaurant du Jura has stood since 1896 in the middle of Chevroux, a lakeside village in the Broye. Five generations of the same family have followed one another here. Today Olivier Marmier is at the stove and his wife Annick greets the guests.
Lake Neuchâtel is a few minutes’ walk away, and behind it the Grande Cariçaie, the largest lakeside nature reserve in Switzerland. That is where the perch come from, when the catch allows.
